Einstein Bros. Bagels butters up Suntree with delicious product

Bagel lovers know that a fresh bagel has a limited lifespan and that the perfect bagel must have a distinct combination of chewiness and crunchiness.

Einstein Bros. Bagels in Suntree fills the cases with piping hot bagels every two hours, ensuring that customers can enjoy the delicious warm crunchiness of a fresh bagel whenever they walk in.

“We offer a great healthy alternative to fast food,” said Dr. Jim Shafer, who owns the Suntree franchise. “Everything we serve is fresh.”

Twenty-one types of bagels are available at Einstein Bros. Bagels, including garlic, potato, cranberry, asiago and onion. Toppings, or shmear, include onion and chive, smoked salmon, blueberry and garlic with herb.

“My philosophy is that if you take care of the customers they will take care of you,” Shafer said. “We know all of our customers. Seventy percent are daily returns. When they walk in, my staff already knows what they want. It’s like a Cheers atmosphere.”

The neighborhood bagel shop offers egg sandwiches, lunch sandwiches, bagel boxes, and tempting beverages in a family-friendly atmosphere. Lunch options include Spinach & Artichoke Chicken, Italian Chicken and even a pizza bagel. Calorie content is available on the menu.

“My favorite part of this is the challenge of owning a business, and providing jobs for 80 people in two counties,” said Shafer, a neurologist. “We are doing something positive for the community.”

Shafer, who has opened four Einstein Bros. Brothers bagel shops in four years, said that he chose the bagel franchise because it allowed him to continue his medical career as he pursued the restaurant business. Einstein Bagels originally began in Colorado, and Shafer contacted them several times before the company agreed to open a franchise on the Treasure Coast, followed by three more in Brevard County.

“I could not do this without my operations officer and my managers,” Shafer said. “With owning a franchise like this, you don’t have to be there all the time.” COO Paul Lydon takes care of day to day operations, while Gabe Garcia is the manager of the Suntree Einstein Bros. Brothers bagels.
