Sergio’s Tacos stresses food, family and fresh ingredients

Ashlin Romero sees some familiar faces when he enters the kitchen of his newly opened Viera restaurant, Sergio’s Tacos Mexican Grill.
Romero’s mother, Mary, and grandmother, Maria, can be found at the casual restaurant at the Mobil station at 5470 Murrell Road, preparing dishes based on old recipes they learned years ago while growing up in Mexico.
Working with family is nothing new for Romero, who named the restaurant after his father.
“I grew up in the restaurant business,” said Romero, who opened Sergio’s at the former home of one of Viera Pizza’s two locations on Nov. 11. “Since I was young they had me working with them, and that’s how I got to grow in the restaurant business.”
Romero and Viera Pizza owner Mike Acosta, who runs Viera Pizza’s remaining location at 5450 Stadium Parkway, came up with the idea of opening the Mexican restaurant at Viera Pizza’s old Murrell Road location. The two felt there were too many pizza places in that area and that a different type of fare was needed.
Now it’s Romero’s turn to run a restaurant, and from the positive reviews that Sergio’s gotten so far from customers, he’s off to a great start.
“We moved to the area over 10 years ago and have been searching for a taste of our hometown, San Antonio, ever since,” recent customer Christy Martin Farias posted on Sergio’s Facebook page. “I am so glad we finally found Sergio’s, it is so delicious, authentic Mexican food.”
Romero uses only fresh ingredients for all menu items, and visitors can taste the difference.
“Everybody’s loving it,” he said. “They call it California style. They’re loving how they can taste the fresh ingredients. It’s very authentic.”
As the name on the marquee attests, tacos are a Sergio’s specialty. Romero recommends the popular carne asada tacos with skirt steak and topped with onions and cilantro, and Al Pastor tacos with diced pork marinated with Guajillo chile and topped with onions, cilantro and pineapple, served in a handmade corn tortilla or in a hard shell or flour tortilla.
“The Mexican sandwiches are very amazing, too,” Romero said. “We’ve also got chicken or steak burritos and taco salad bowls.”
Sergio’s offers catering and will add delivery service soon, Romero said.
Although Romero earned a mechanical aerospace engineering degree from Florida Tech in December, he plans to focus on his restaurant for now.
“One thing I wanted is to share my culture with Viera and bring something to the community,” he said. “This is something I’ve always been passionate about. This is something I just wanted to open.”
